Frequently Asked Questions

How do I season my new smoker?

Before first use, we recommend coating the interior with cooking oil and running your smoker at 250-300°F for 2-3 hours. This creates a protective layer and removes any manufacturing residues. Repeat this process 1-2 times for best results.

What’s the difference between the Brazos and Pecos models?

The Brazos features thicker 1/4″ steel construction compared to the Pecos’ 3/16″ steel. The Brazos has a larger cooking chamber, better heat retention, and includes more features. The Pecos is our entry-level model that’s more budget-friendly while still delivering excellent performance.

Do your smokers come assembled?

Most of our smokers require minimal assembly upon delivery. The main chambers come fully welded, and you’ll typically just need to attach the legs, side shelves, and chimney. Detailed assembly instructions are included with each unit.

How do I control temperature in an offset smoker?

Temperature is controlled through managing your fire size, airflow through the firebox door, and the chimney damper. Smaller, hotter fires with good airflow will provide cleaner smoke compared to large, smoldering fires. We recommend starting with a small fire and gradually building it to your target temperature.

What kind of warranty do you offer?

All Old Country Smokers come with a 1-year manufacturer’s warranty against defects in materials and workmanship under normal use and maintenance. Our smokers are built to last generations with proper care.

How do I maintain my smoker?

After each use, clean out ashes from the firebox and food debris from the cooking chamber. Periodically check for and remove creosote buildup. Store your smoker in a covered area when not in use or purchase one of our custom-fit covers. Touch up any paint chips promptly to prevent rust.

Can I cook with charcoal in your offset smokers?

Yes, you can use charcoal as your heat source, though for traditional offset smoking we recommend using wood splits or chunks for the best flavor. Many pitmasters use a combination of charcoal for consistent heat and wood for flavor.
